WHEN TO HARVEST LAVENDER
Lavender can be harvested in the late spring or early summer. Timing is everything when it comes to harvesting lavender, as the concentration of essential oils peaks just as the flowers begin to open. It is best to cut your lavender in the early morning after the dew has evaporated. Simply use sharp shears to cut the stems a few inches above the woody growth, ensuring you leave enough green foliage for the plant to recover for the next season.
